His rise and progress has been impressive if not borderline unbelievable. What makes this even more amazing is the variety and region were completely obscure to most of the world only 15 years ago. Xinomavro is arguably Greece’s contribution to the noble grape varieties of the world, capable of creating breathtaking complex wines, but as a thin skinned, highly tannic variety, it requires extremely careful handling, something at which Thymiopoulos seems particularly deft.
