Forest Hill 'Block 8' Chardonnay 2025

  • TASTING NOTE: Pale straw. Lifted in the glass with white stone fruit, lemon curd, brioche and flint. Slaking palate of pithy citrus, grilled white nectarine and faint nougat. Driving acidity finishing long and saline. Forest Hill
  • ABOUT THE WINE: Small parcels of Block 8 were hand harvested over three days. The whole bunch grapes were chilled overnight before hand-sorting and pressing. The small amount of free run was pressed (retaining full solids) to French Oak barriques, Hogsheads and puncheon (~25% new) for fermentation with indigenous yeast. Fermentation was held at cool to begin and then let to ferment at ambient temperatures. Once alcoholic fermentation was completed, barrels had a short period of stirring, and some natural malolactic fermentation is encouraged. Forest Hill
  • ABOUT THE PRODUCER: Forest Hill Vineyard has a unique place in the history of Western Australia’s wine industry, being the first cool climate vineyard planted in the state in 1965 as an experiment by the Western Australian Department of Agriculture. The original vineyard was planted with Riesling and Cabernet cuttings sourced from the Houghton's property in the Swan Valley. The property was purchased by the Lyons family in 1996 who embarked on a program to rejuvenate the old vineyards and plant appropriate new ones.
