- TASTING NOTE: "Fermented in concrete vats, matured for 16 months in French oak (30% new). Savoury, textured and very long, this is not the succulent red-fruited explosion of Margaret River cabernets (neither a good nor bad thing, just an observation). It has the layered complexity we often find in Bordeaux, with a plumply satisfying core of cassis and redcurrant. Not overt, but restrained, with willowy tannins. - ABOUT THE WINE: This parcel of fruit is sourced from a tiny, gravelly block at Hazel’s Vineyard planted in 1999. To retain berry integrity the fruit was picked and gently transferred by gravity into vertical four tonne stone fermenters with no temperature control. Extraction was soft and fermentation carried out by the native yeast specific of this vineyard. After three weeks on skins the wine was softly pressed to French oak barriques, 30% of which were new. The wine was then matured in our cool underground cellars for 16 months before being racked and bottled after a coarse filtration.
